My connection to croquettas goes way back to my favorite friend, for whom this was the ultimate comfort food since childhood. He was never fond of cooking, yet he would always prepare croquettas for himself and friends. Everyone remembers his square croquettas so fondly—he skipped the shaping step entirely, insisting they tasted better with corners.

Patience in croquettas is not only about stirring. It’s also about waiting—at least 4 to 6 hours for the béchamel to rest and set before shaping, breading, and frying. That pause is part of the ritual: the discipline of slowing down, trusting time, and knowing that the reward will come later. Croquettas ask for perseverance: the stirring, the waiting, the shaping, the breading. And when they finally emerge golden and crisp, whether square or round, they carry the resolve to finish every step — and the joy of sharing.
